I met Mr. Kajita in 2019. When I tasted Mr. Kajita’s soy sauce for the first time, I still remember the strange feeling I had when I could see the background of his soy sauce, his thoughts and beliefs. I believe that the most important thing about food is the people who are involved in it, rather than the ocean, mountains, rivers, or any other rich natural environment. I think I can feel the connection between people and people, and between people and nature, which is so important in our lives, from Mr. Kajita’s soy sauce. Mr. Kajita’s soy sauce is an indispensable link between ingredients for FUJI. Thank you very much.

(日本語) 1985年静岡市生まれ。
大学を中退し料理の世界へ。
2014年、地元静岡で日本料理FUJIをオープン。最初は修業先からの影響で全国の食材を使っていたが、2019年から静岡の食材を活かした料理に変えた。
